Versatile Pudding
Ingredients
3 eggs
¾ cup sugar or Splenda
1/3 cup flour
1 Tbsp corn starch
2 Tbsp butter/margarine
One of the following:
- ¼ cup cocoa powder and 1 tsp vanilla
- ½ cup coconut and ½ tsp coconut extract
- ¼ cup chopped maraschino cherries and ½ tsp cherry flavoring
- Your own concoction
Directions
- Heat milk in a saucepan until bubble form around edges
- Meanwhile, stir together eggs, sweetner, flour and corn starch in a bowl
- Pour some of the milk into the mixture and whisk well
- Whisk mixture into remaining milk, stirring constantly
- Cook over medium heat until misture starts to boil (about 5 minutes), whisking frequently
- Reduce heat and continue until thickened (mounds on a spoon)
- Remove from heat and add butter and ONE of the flavor combinations above. Whisk until well mixed and melted
- Pour into serving dishes and cool. Makes 6 or more servings
NOTES:
- If making the chocolate pudding, you might want to add cocoa to flour mixture with other ingredients.
- Try adding ½ cup almond slices to the coconut or chocolate pudding.
